Breakfast is by far my favourite meal of the day, a big breaky gets me going for the long day ahead. I'm a lover of all things savoury for breakfast, from crispy bacon, avocado, fried mushrooms, to delicious dippy eggs - i'll demolish anything. However at breakfast time the big question is always..how do you like your eggs in the morning??
Boiled, fried, scrambled or poached, my favourite has to be scrumpticious scrambled eggs with cherry tomatoes & a slice of avocado. It's always so quick, simple and stress free especially when i'm in a rush! However today my housemate Hannah tempted me with her perfectly poached eggs for breakfast served with lemon sautéd spinach, and I couldn't resist.
Poach Egg & Spinach Recipe - Serves 2
Time - 5 Minutes
Poached eggs - do you love them, hate them or struggle to make them? Before today I loved them, but always struggled to make them, i'd usually end up splitting my yolks and end up with a watery eggy mess. Now I'm feeling confident I can make them, perfectly runny and utterly delicious, day in day out without fuss!
4 large eggs
2 handfuls of spinach
Salt & pepper to season
Juice of half a lemon
Place a medium shallow pan with water onto a high heat, bringing to the boil.
Once water is boiling crack your eggs into the water slowly one at a time. The eggs will begin to cook immediately. Leave for 2 minutes for a soft yolk and 4 minutes for firm yolk.
Meanwhile, in a separate pan add the spinach and a drop of water, and place onto a medium heat. Season the Spinach well with lemon juice, salt and pepper, and leave to sauté for 2 minutes.
After 2 minutes check your eggs to see if they are cooked throughout. Using a slotted spoon remove one eggs and press gently with your finger, making sure the egg doesn't feel too soft, if it does place back into the water for a further minute and repeat.
Once cooked place onto a piece of kitchen roll, allowing the water to drain off.
To serve place the spinach onto the place, add your perfectly poach eggs. Season to taste & enjoy!!
